Ingredients
  

Shortbread Base

  • 1 cup unsalted butter, softened
  • ½ cup granulated sugar
  • 2 cups all-purpose flour
  • 1 teaspoon vanilla extract
  • ½ teaspoon salt

Strawberry Topping

  • 2 cups fresh strawberries, hulled and sliced
  • ¼ cup powdered sugar
  • 1 tablespoon fresh lemon juice

Baking Instructions

  • Preheat oven to 350°F (175°C). Grease or line a 9×9-inch baking pan.
  • In a mixing bowl, cream together softened butter and granulated sugar until fluffy. Add vanilla and salt, then gradually mix in flour.
  • Press the mixture into the prepared pan evenly and prick the surface with a fork.
  • Bake for 20-25 minutes until edges are golden. Allow to cool completely.
  • In another bowl, combine sliced strawberries, powdered sugar, and lemon juice; gently toss to coat.
  • Spread the strawberry mixture over the cooled shortbread crust.
  • Cut into bars and serve chilled or at room temperature.

Notes

For a richer flavor, you can add a pinch of lemon zest to the strawberry mixture.
