Ingredients
  

Cookie Base

  • 1 cup unsalted butter softened
  • 1 cup granulated sugar
  • 1 cup flour all-purpose
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 1 teaspoon vanilla extract

Lemonade Filling

  • 1 cup lemon juice freshly squeezed
  • 1 cup sugar for sweetness
  • 1 tablespoon lemon zest for flavor

Crumb Topping

  • 1 cup oats rolled
  • ½ cup brown sugar
  • cup melted butter

Instructions
 

Preparation

  • Preheat the oven to 350°F (175°C).
  • In a mixing bowl, cream together the butter and sugar until light and fluffy.
  • Add the flour, baking powder, and salt, mixing until combined.
  • Press the cookie base mixture into the bottom of a baking dish.
  • In another bowl, mix the lemon juice, sugar, and lemon zest until smooth. Pour over the cookie base.
  • For the topping, combine oats, brown sugar, and melted butter; sprinkle over the filling.
  • Bake in the preheated oven for about 30 minutes until golden brown.
  • Let cool for 10 minutes before slicing.
