  • ¼ cup sun-dried tomato pesto Available at regular grocery stores.
  • 1 tablespoon lemon juice Fresh lemon juice is recommended.
  • 1 tablespoon roasted almonds, chopped Can be swapped for other nuts.
  • a handful fresh thyme leaves
  • a handful fresh oregano leaves, chopped

Preparation Instructions

  • Mix the olive oil, sun-dried tomato pesto, lemon juice, chopped almonds, and both the oregano and thyme in a serving bowl or lipped plate. Mix well to combine, then taste and season with a little salt if needed.
  • Arrange a selection of bread around the dipping oil and let everyone help themselves.

Notes

Storage Instructions: The dip keeps well for 1 week in the fridge stored in a covered container. Herbs may dull in color once mixed with the oil, so mix just before serving.
