Ingredients
  

Proteins

  • 1 pound boneless chicken thighs or breast, cut into 1-inch pieces

Vegetables

  • 2 cups bell peppers any color, sliced
  • 2 cloves fresh garlic minced
  • 1 tablespoon fresh ginger minced

Sauce Ingredients

  • ¼ cup soy sauce low-sodium preferred
  • 1 tablespoon honey or brown sugar

Oils

  • 2 tablespoons high-smoke-point oil like avocado or canola oil

Cooking Instructions

  • Pat the chicken dry and season with salt and pepper.
  • Heat the oil in a wok over high heat until it's shimmering.
  • Add the chicken in a single layer and sear until golden brown, about 3-5 minutes.
  • Remove the chicken and set aside.
  • In the same pan, add garlic and ginger, stir-frying for about 30 seconds until fragrant.
  • Add the bell peppers and stir-fry until vibrant and just tender, about 2-3 minutes.
  • Return the chicken to the wok, add soy sauce and honey, and stir to combine.
  • Allow the sauce to simmer until slightly thickened, about 2-3 minutes.
  • Serve hot, garnished with lime juice or green onions if desired.

Notes

For a spicier version, add red pepper flakes to the sauce or garnish with fresh chili peppers.
