Ingredients
  

For the Crust

  • 1 lb boneless, skinless chicken breast, cubed
  • 1 cup jasmine rice, uncooked
  • 2 cups water
  • 1 piece red bell pepper, sliced
  • 1 cup broccoli florets
  • 1 piece carrot, julienned
  • 3 tablespoon soy sauce
  • 2 tablespoon honey
  • 1 tablespoon rice vinegar
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, grated
  • 2 tablespoon olive oil
  • Salt and pepper to taste
  • Green onions, sliced for garnish

Preparation Steps

  • Cook the jasmine rice according to package instructions with 2 cups water until fluffy.
  • In a bowl, whisk together soy sauce, honey, rice vinegar, garlic, and ginger to make the sauce.
  • Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Add chicken, season with salt and pepper, and cook until browned and cooked through, about 6-8 minutes.
  • Pour the sauce over the chicken, stir to coat, and simmer for 2-3 minutes until slightly thickened.
  • In another pan, heat the remaining olive oil. Sauté bell pepper, broccoli, and carrot for 4-5 minutes until tender-crisp.
  • Assemble bowls by dividing rice, chicken, and vegetables. Garnish with green onions and serve warm.
