Ingredients
  

Meat

  • 6 slices bacon
  • 1 pound lean ground beef
  • 14 ounces smoked sausage sliced into ¼-inch thick rounds

Vegetables

  • 1 cup diced onion about half a large onion
  • 2 teaspoons minced garlic about 2 cloves
  • 3 cups peeled and diced Yukon Gold potatoes about 2-3 medium potatoes cut into 1-inch pieces
  • 1 can diced tomatoes 14.5-ounce can, not drained
  • 1 can pinto beans 15.5-ounce can, drained and rinsed
  • 1 can black beans 15-ounce can, drained and rinsed
  • 1 can diced tomatoes and green chiles 14.5-ounce can, not drained
  • 1 can whole kernel corn 15-ounce can, drained

Broth and Spices

  • 2.5-3 cups beef broth
  • 2 teaspoons cumin
  • 2 teaspoons chili powder
  • salt to taste
  • ground black pepper to taste

Instructions
 

Cooking Steps

  • Dice bacon into small pieces, then add to a large pot over medium-high heat. Stir and cook until crisp, about 5-7 minutes. Remove bacon from pot and drain on paper towels.
  • Add ground beef to the pot and cook until no pink remains, about 5-7 minutes. Add diced onion, minced garlic, and smoked sausage, cooking until onion is translucent.
  • Lower the heat and add diced tomatoes, pinto beans, black beans, diced tomatoes and green chiles, whole kernel corn, Yukon Gold potatoes, beef broth, cumin, chili powder, and reserved bacon. Season with salt and pepper.
  • Once bubbling, reduce the heat to medium-low and cover the pot. Simmer for 45 minutes to an hour, stirring occasionally.

Notes

Store leftovers in an airtight container in the fridge for up to 5 days. Cool completely before freezing in a freezer-safe container for up to 3 months. Thaw overnight in the fridge and warm on the stovetop until heated through.
