Ingredients
  

Fries

  • 2 lbs russet potatoes, peeled and cut to fries ¼ inch thick
  • oil, for frying depends on the size of your pot
  • 2 teaspoon salt or truffle salt
  • ½ cup parmesan cheese, grated
  • 1 tablespoon thyme leaves for garnish

Aioli

  • 2 eggs one whole egg, one yolk room temperature
  • 1 cup vegetable oil
  • 1 clove garlic, diced
  • 1 tablespoon Dijon mustard
  • 2 teaspoon lemon juice
  • ½ teaspoon salt
  • ½ teaspoon truffle oil add more to taste, just a little at a time

Instructions
 

Fry Preparation

  • Place the cut and peeled fries in a large bowl of cold water. Let sit for at least one hour, up to three.
  • Heat a medium pot of water over high heat. Strain the fries, and add them to the pot. Let them boil for five minutes, then strain and cool.
  • Dry the fries on a cooling rack for two hours. Dry them completely using clean tea towels or paper towels.
  • Heat a large pot with oil for deep frying over medium high heat, aiming for 350°F. Add fries in batches, cooking for 7-10 minutes. Remove to a wire cooling rack.
  • Allow the oil to come back up to 350°F, then repeat cooking the fries for 3-5 minutes until golden brown. Sprinkle with salt or truffle salt and let rest for 5 minutes.
  • Place the fries on a serving platter and top with parmesan and thyme leaves.

Aioli Preparation

  • Add the eggs, oil, Dijon mustard, lemon juice, garlic, and salt to a tall and deep dish. Use immersion blender until thick and smooth. Add truffle oil to taste.

Notes

The fry process is lengthy, but worth it. Truffle oil is potent; start with ½ teaspoon and add to taste.
