Ingredients
  

  • 1 pound lean ground turkey
  • 6 cups chopped romaine lettuce
  • 1 cup halved cherry tomatoes
  • 1 cup canned black beans drained and rinsed
  • 1 cup canned corn kernels drained
  • 1 cup shredded cheddar cheese
  • 1 large avocado diced
  • 1 cup fresh salsa
  • 1 tablespoon olive oil
  • 2 tablespoons taco seasoning
  • 1 whole lime cut into wedges
  • 1 teaspoon salt or to taste

Instructions
 

  • Heat a large skillet over medium heat.
  • Add olive oil and ground turkey to the skillet. Sprinkle with taco seasoning and half of the salt.
  • Cook the turkey for 7 to 10 minutes, breaking it apart with a spoon, until fully browned and cooked through.
  • Remove from heat and let the turkey cool slightly.
  • In a large serving bowl, layer chopped romaine, black beans, corn, cherry tomatoes, and shredded cheddar cheese.
  • Spoon the cooked turkey evenly over the salad base.
  • Top with diced avocado and fresh salsa.
  • Squeeze lime juice over the salad and sprinkle with remaining salt if needed.
  • Toss gently if desired and serve immediately.

Notes

Let the turkey cool slightly before adding to the lettuce to prevent wilting. For extra heat, add a pinch of chili flakes while cooking the turkey. Keep components separate if meal prepping and assemble just before serving.
