Ingredients
  

Produce

  • 1.5 lbs watermelon, cubed approximately ½” cubes
  • 2 scallions, thinly sliced
  • 4 radishes, thinly shaved
  • 10 basil leaves, roughly torn
  • 6 mint leaves, roughly torn
  • 4 cups arugula

Dairy

  • 0.25 lbs feta cheese, crumbled

Nuts

  • 0.5 cups salted, roasted pistachios, chopped

Condiments

  • 0.25 cups fresh lime juice
  • 1 tablespoon honey
  • 2 tablespoon olive oil plus more as needed
  • 0.5 teaspoon red pepper flakes

Seasonings

  • kosher salt to taste
  • freshly cracked black pepper to taste
  • 2 teaspoon lime zest

Oil

  • 0.25 cups olive oil

Instructions
 

Preparation

  • Combine the watermelon, scallions, radishes, feta, basil, mint, lime juice, ¼ cup of olive oil, and honey in a mixing bowl. Gently toss to combine. Season with salt and black pepper to taste.
  • Arrange the arugula in a salad bowl. Lightly drizzle with olive oil. Mound the watermelon mixture over top.
  • In a small bowl, stir the pistachios, lime zest, red pepper flakes, and remaining 2 tablespoons of olive oil together. Spoon this over the salad. Garnish with any extra herbs and more black pepper.

Notes

This salad is perfect for summer gatherings and can be made ahead of time. Just add the pistachios right before serving for the best crunch.
