Ingredients
  

Vegetables

  • 1 lb broccoli cut into florets, then slice into small pieces
  • 1 onion diced
  • 1 carrot diced
  • 0.45 lb cherry tomatoes cut into halves
  • 1 zucchini diced

Dairy and Eggs

  • 4 eggs
  • 6.5 tablespoons heavy cream
  • 2.5 oz parmesan cheese grated
  • 2.5 oz feta cheese mashed
  • 2 tablespoons mayonnaise
  • 2 tablespoons greek yogurt

Herbs and Seasonings

  • 2 cloves garlic pressed
  • dill chopped
  • salt
  • pepper
  • olive oil for sautéing

Instructions
 

  • Add 4 eggs, 6 and ¼ tablespoons of heavy cream, and salt in a mixing bowl. Whisk until well combined.
  • Grate the parmesan into the egg mixture. Put the feta cheese in a bowl and mash using a fork. Add it to the mixture and stir.
  • Drizzle some olive oil into a pan and add the diced onion. Saute for 1 minute. Next, add the diced carrots. Fry for 2 minutes, then add the diced zucchini. Fry for another 2 minutes. Lastly, add the broccoli and cook for 4 minutes. Season with salt and pepper, then mix.
  • Turn off the heat and add the cherry tomatoes. Pour the egg and cheese mixture into the pan. Mix until well incorporated.
  • Place the pan inside the oven and bake for 30 minutes at 374F.
  • Make the sauce. In a small bowl, combine 2 tablespoons of mayonnaise, 2 tablespoons of greek yogurt, 2 cloves of pressed garlic, and chopped dill.
  • After 30 minutes, remove the pan from the oven and put the casserole on a serving plate. Slice and serve with the sauce. Enjoy!
